Soba Yamase

Two styles of handmade soba are prepared daily: refined white “Yamase Soba,” milled from hulled grains, and aromatic “Inaka Soba,” stone-ground with the husk. Two kinds of dashi are made with additive-free soy sauce to bring out the soba’s flavor. Tableware is crafted by the owner, who is also a potter, creating harmony between food and vessel. Pair with recommended local sake and experience the depth of Kaga’s handmade soba in a calm setting.
